🌯 Greek Chicken Wraps

Bright, herby, and protein-packed. Perfect for on-the-go lunches.

Ingredients (makes 2 wraps):

  • 1 chicken breast (7 oz), chopped into 1” pieces

  • 1 small zucchini, chopped

  • 1 bell pepper, chopped

  • ½ red onion, chopped

  • 1 tbsp olive oil

  • 1 tsp oregano

  • 1 tsp basil

  • ¼ tsp garlic powder

  • ¼ tsp onion powder

  • ¼ tsp salt

  • 1 lemon, sliced

To Serve:

  • 2 tbsp feta cheese, crumbled

  • 2 large flour tortillas or wraps (I LOVE HERO tortillas made with avocado oil)

👩‍🍳 Instructions

  1. Preheat oven to 425°F.

  2. In a large bowl, toss chicken, zucchini, bell pepper, onion, olive oil, and seasonings. Lay lemon slices under the chicken mix on a second baking sheet.

  3. Roast tray for 15 minutes, or until veggies are tender and chicken is fully cooked.

🍽️ To Assemble + Store

Greek Chicken Wraps:
Divide chicken and roasted veggies into two containers (remove lemon slices). Sprinkle with feta.
Reheat and spoon into a tortilla when ready to serve.

Storage Tip: Keeps fresh in the fridge for up to 4 days.
